4 cups fresh spinach
1 cup bacon, chopped
¼ cup onions, chopped
1 clove garlic, minced
2 tablespoons cider vinegar
1 cup apple juice
1 apple, peeled, cored and chopped
1 cup fresh morels, chopped (other mushrooms may be substituted)
Salt and pepper to taste
Freshly grated Parmesan cheese
Render bacon until fat has cooked out of bacon. Remove bacon but leave fat in pan. Saute galic and shallot until translucent being careful not to brown garlic.
Deglaze pan with vinegar and apple juice. Add chopped apple and morels and bring to a simmer for 4-5 minutes. Add water if pan becomes dry. Season with salt and pepper if needed.
Toss warm dressing with spinach and served immediately. Garnish with freshly grated Parmesan cheese.
